1.1/2 cups grated carrots
1-1/3 cups brown sugar
1-1/3 cups water
2 cups whole wheat flour
2 teaspoons baking powder
1 cup raisins
2 tablespoons butter
1 teaspoon cinnamon
Pinch salt
1/2 cup chopped nuts
1. Boil carrots, sugar, water and raisins for about 5 minutes.
2. Add butter and cinnamon to hot mixture and allow it to cool.
3. Sift dry ingredients together and add.
4. Then add nuts.
5. Bake for 50-60 minutes at 350 degrees.
